Heat 1 tablespoon of sesame oil in a large pan or wok over medium heat.

Add the 3 cloves of minced garlic and 1 tablespoon of grated ginger to the pan. Sauté until fragrant, about 10-15 seconds, stirring occasionally.

Add the 200 grams of prawns to the pan and cook until they turn pink and opaque, indicating they are cooked through. Remove the cooked prawns from the pan and set them aside.

Take 1 sheet of nori seaweed and cut it into thin strips using scissors or a knife.

Bring a pot of water to a boil. Add the 2 packs of udon noodles to the boiling water and cook according to the package instructions until they are tender. Drain the cooked udon noodles and set them aside.

In a small bowl, combine 1 tablespoon of soy sauce, 1 tablespoon of sweet chilli sauce, 1 teaspoon of sugar, 1 tablespoon of rice wine vinegar, 1 tablespoon of water, and 1 teaspoon of cornflour. Whisk all the ingredients together thoroughly until the cornflour is fully dissolved and the sauce is smooth.

Return the pan previously used for the prawns to medium heat. Add the drained udon noodles to the pan.

Pour the prepared sauce mixture over the noodles. Add the cooked prawns back into the pan with the noodles. Add the cut nori strips to the pan.

Stir everything together, ensuring the noodles are evenly coated with the sauce and all ingredients are well combined and heated through.

Crack 1 egg directly into the pan. Quickly stir to scramble the egg and mix it into the noodles.

Add 1 tablespoon of crispy chilli oil to the noodles and stir to incorporate.

Transfer the finished crispy garlic prawn & nori udon to a serving bowl. Garnish with chopped spring onion before serving.
