Place the sliced chicken thigh in a medium bowl. Add 1 tablespoon of soy sauce, 1 tablespoon of mirin, 1 teaspoon of granulated sugar, 1 teaspoon of sesame oil, and 1 teaspoon of cornstarch. Mix well to thoroughly coat the chicken pieces. Set aside.

In a separate small bowl, combine the dashi stock, 2 tablespoons of soy sauce, 1 tablespoon of mirin, and 1 tablespoon of granulated sugar for the sauce. Stir until the sugar is dissolved.

Heat 1 tablespoon of oil in a large skillet or non-stick pan over medium-high heat. Add the marinated chicken pieces and pan-fry for 4-5 minutes, or until they are golden brown and cooked through.

Add the thinly sliced onion to the pan with the chicken. Pour in the prepared sauce mixture. Bring to a gentle simmer.

Reduce the heat to medium-low and simmer for 3-4 minutes, or until the onions are soft and translucent.

Pour approximately 3/4 of the lightly beaten eggs evenly over the simmering chicken and onion mixture in the pan.

Cover the pan with a lid and cook for 1-2 minutes, or until the eggs are mostly set but still slightly runny in the center.

Carefully pour the remaining 1/4 of the beaten eggs over the top of the partially cooked eggs.

Cover the pan again and cook for another 30 seconds to 1 minute, or until the eggs are cooked to your desired doneness (some prefer them slightly runny, others fully set).

Divide the freshly cooked rice among 4 serving bowls. Carefully slide the Oyakodon mixture from the pan over the rice in each bowl.

Garnish generously with chopped green onions before serving immediately.
