Place the 2 chicken breasts in a bowl. Drizzle 1 tablespoon of olive oil over the chicken.

Season the chicken with 1 teaspoon dried oregano, 1 teaspoon dried basil, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Rub the seasoning evenly over the chicken breasts.

Place the seasoned chicken breasts into an air fryer basket. Air fry the chicken at 180°C for 15-20 minutes, or until cooked through and an internal temperature of 74°C (165°F) is reached.

Meanwhile, prepare the sauce. In a pan, melt 1 tablespoon of butter over medium heat.

Add 2 cloves of minced garlic to the pan and sauté briefly, about 30 seconds, until fragrant.

Add 1/4 cup of chopped sun-dried tomatoes to the pan and cook for another minute.

Pour in 1/2 cup of chicken stock and bring to a simmer.

Stir in 1/2 cup of heavy cream.

Add 1/4 cup of grated Parmesan cheese and stir until combined and the sauce is slightly thickened.

Stir in 1 cup of fresh spinach until wilted, which should take about 1-2 minutes.

Once the chicken is cooked, remove it from the air fryer and slice it into desired pieces.

Add the sliced chicken to the sauce in the pan. Stir the chicken into the sauce to coat.

Serve immediately with cooked pasta.
