Preheat your oven to 180°C (350°F).
Add the 2 small to medium bananas to a baking dish. Mash the bananas well using a fork directly in the baking dish until smooth.

Add the remaining ingredients for the Carrot Cake Baked Oats to the mashed bananas in the baking dish: 1 to 2 tablespoons maple syrup, 1 cup rolled oats, 1 cup vanilla protein powder (or more oats), 40 grams vanilla protein powder, 1 1/2 teaspoons baking powder, 1 teaspoon cinnamon, 1 3/4 cups milk, and 1 grated carrot (100g).

Mix all the ingredients thoroughly in the baking dish using a spatula until well combined and no dry spots remain.

Bake the mixture in the preheated oven for 35–40 minutes, or until it is golden brown and set in the center.

Remove the baked oats from the oven and allow them to cool completely before proceeding to frost them. This may take at least 30 minutes.

While the oats are cooling, prepare the Cream Cheese Frosting. In a separate bowl, combine 100 grams Philadelphia cream cheese, 150 grams vanilla Greek yoghurt, and 30 grams icing sugar (or sugar-free icing sugar or sweetener of choice).

Mix the frosting ingredients together using a whisk or spatula until the mixture is smooth and creamy.

Once the baked oats have cooled completely, spread the prepared cream cheese frosting evenly over the top.

Optionally, top the frosted baked oats with shredded coconut or crushed walnuts for garnish. Alternatively, you can simply serve the baked oats with a dollop of yogurt of your choice instead of the cream cheese frosting.

Store any leftover Carrot Cake Baked Oats in an airtight container in the fridge.
