Preheat your oven to 425°F (218°C).

In a large bowl, combine the cornmeal, flour, mofo (or your preferred seasoned mix), and a good amount of delicious seasoning. Mix well with a whisk or fork until all ingredients are evenly distributed. This is your bread coating.

In a separate shallow bowl, whisk the 4 whole eggs until smooth and well combined. This is your egg wash.

Take your fish filets and generously season them on both sides with Greek seasoning, smoked paprika, and additional delicious seasoning. Use your hands to gently rub the seasonings into the fish, ensuring an even coat.

Dip each seasoned fish filet into the egg wash, making sure it is fully covered. Allow any excess egg wash to drip off.

Immediately transfer the egg-washed fish filet to the bread coating mixture. Press down lightly on both sides to ensure the coating sticks well and completely covers the fish.

Line a flat baking pan with parchment paper. Lightly spray the bottom of the parchment paper with oil or butter spray to prevent sticking.

Arrange the coated fish filets on the prepared baking pan, ensuring they are not overcrowded.

Lightly spray the top of each fish piece with additional butter or oil spray. This will help achieve a crispy exterior.
