Add the cut potatoes and corn flour to a large bowl and toss really well to coat all the chips evenly.

Add the extra virgin olive oil, dried herbs (or garlic and herb seasoning), and salt to the bowl with the floured chips. Toss again until all chips are thoroughly coated with the oil and seasonings.

Transfer the seasoned chips to your air-fryer basket. Cook for 15-20 minutes at 180°C (350°F) or until they are golden brown and crispy.

If you do not have an air fryer, you can cook these chips in a conventional oven. Preheat your oven to 180°C (350°F). Spread the seasoned chips in a single layer on a baking sheet. Cook for 20-25 minutes, flipping the chips halfway through the cooking time, until golden and crispy.
