Add the short-grain white rice to the inner pot of your rice cooker.

Pour the soy sauce, granulated sugar, sake, and mirin directly over the rice in the pot.

Add the water to the pot. Using tongs or a rice paddle, gently mix the rice and all the liquids thoroughly until well combined. Ensure the sugar is dissolved.

Evenly spread the thinly sliced yellow onion on top of the rice and liquid mixture.

Arrange the thinly sliced beef in a single layer over the onions.

Gently use tongs to tuck the beef and onion into the liquid as much as possible, ensuring they are mostly submerged.

Close the lid of the rice cooker and select the 'white rice' or 'regular cook' setting. Press the start button to begin cooking.

Allow the rice cooker to complete its full cooking cycle. Do not open the lid during cooking.

Once the rice cooker indicates cooking is complete, open the lid. The beef and rice should be fully cooked and tender.

Using a rice paddle and tongs, gently fluff and mix the Gyudon in the rice cooker pot to combine the beef, onions, and rice.

Serve the Gyudon hot into individual bowls. Garnish each serving with freshly chopped green onions before enjoying.
