Preheat your oven to 350°F (175°C). Lightly grease and flour a 9x13 inch baking dish, or line with parchment paper, leaving an overhang on the sides for easy removal.

In the bowl of a stand mixer fitted with the paddle attachment, combine the softened butter, granulated sugar, and brown sugar.

Cream the mixture together on medium speed until it is light and fluffy, about 2-3 minutes, scraping down the sides of the bowl as needed.

Add the eggs one at a time, beating well after each addition until fully incorporated. Stir in the vanilla extract.

In a separate medium bowl, whisk together the flour, baking soda, and salt.

Gradually add the dry ingredient mixture to the wet ingredients in the stand mixer, mixing on low speed until just combined. Be careful not to overmix.

Remove the bowl from the mixer and gently fold in the 1 cup of toffee bits using a spatula.

Press the prepared cookie dough evenly into the bottom of your prepared baking dish.

Bake the cookie dough base in the preheated oven for 20 minutes. While it bakes, prepare the toffee sauce.

For the toffee sauce: In a medium saucepan, combine the butter, brown sugar, heavy cream, and salt.

Bring the mixture to a boil over medium heat, stirring constantly. Once boiling, reduce the heat to a simmer.

Continue to simmer for 5-7 minutes, stirring occasionally, until the sauce has thickened slightly. It should coat the back of a spoon.

Remove the saucepan from the heat and stir in the vanilla extract.

Once the cookie dough base has baked for 20 minutes, carefully remove it from the oven.

Pour the warm toffee sauce evenly over the hot, partially baked cookie base. Gently spread it to cover the entire surface.

Sprinkle the additional 1/2 cup of toffee bits over the warm toffee sauce.

Return the baking dish to the oven and bake for another 10-15 minutes, or until the edges are golden brown and the toffee sauce is bubbly and slightly set.

Once baked, remove the Toffee Cookie Bars from the oven and place them on a wire rack to cool slightly for at least 15 minutes. This allows the toffee to set a bit.

While still warm, drizzle the melted dark chocolate generously over the top of the bars.

Finish by sprinkling with flaky sea salt. Allow to cool completely before cutting into bars for cleaner slices, or serve warm and gooey.
