Set your multi-cooker to "Sear/Sauté" mode (or use a large pot over medium-high heat). Add the olive oil. Once hot, add the chopped yellow onion and cook for 3-5 minutes until softened.

Preheat your oven to 375°F. Pour a thin layer of the prepared enchilada sauce into the bottom of a 9x13 inch baking dish.

Take one small flour tortilla. Spoon a generous amount of the beef and bean filling onto the center of the tortilla, then sprinkle a small amount of shredded cheese over the filling. Tightly roll up the tortilla and place it seam-side down in the prepared baking dish. Repeat with the remaining tortillas and filling, arranging them snugly in the dish.

Pour the remaining enchilada sauce evenly over the rolled tortillas, ensuring they are well-covered ("smothered"). Sprinkle the remaining shredded cheese evenly over the sauce.

Cover the baking dish tightly with aluminum foil. Bake in the preheated oven for 20-25 minutes, or until the enchiladas are heated through and the cheese is melted and bubbly.

For a golden-brown top, remove the foil during the last 5 minutes of baking, or briefly broil until the cheese is lightly browned. Let the enchiladas rest for a few minutes before serving.

Serve hot with optional toppings such as fresh cilantro, sour cream or plain Greek yogurt, and sliced jalapeños.
