Add 1 cup of white rice to a rice cooker. Pour in 1/2 cup of coconut milk and 1/2 cup of water. Season with a pinch of salt. Close the rice cooker and start cooking the rice according to your rice cooker's instructions.

While the rice is cooking, prepare the chicken. Place the chicken breast on a cutting board. Drizzle olive oil over the chicken, then season generously with salt, black pepper, paprika, and garlic powder. Flip the chicken breast and repeat the seasoning process on the other side. Gently massage the seasonings into both sides of the chicken.

Place the seasoned chicken breast into an air fryer. Air fry for 15 minutes at 180°C (350°F).

While the chicken is air frying, prepare the Bang Bang Sauce. In a small bowl, combine 3 tablespoons of light mayonnaise, 1 tablespoon of sweet chili sauce, 1 teaspoon of sriracha, 1 teaspoon of rice vinegar, and 1/2 teaspoon of honey. Mix all the ingredients thoroughly until the sauce is smooth and well combined.

After 7-8 minutes of air frying, carefully flip the chicken breast to ensure even cooking.

Once the coconut rice is cooked, fluff it with a fork. Once the chicken is cooked through, remove it from the air fryer.

To assemble, serve a portion of the coconut rice in a bowl. Slice the cooked chicken breast into desired pieces and arrange them over the rice.
