Bring water to a boil in a pot.

Add 100g of udon noodles to the boiling water and cook according to package directions. This usually takes 2-3 minutes for fresh udon.

While the udon is cooking, prepare the sauce: In a medium bowl, combine 1 tablespoon peanut butter, 1 tablespoon soy sauce, 1 teaspoon sugar, and 1 tablespoon chilli oil.

Once the udon is nearly cooked, carefully scoop out 1/2 cup of the hot pasta water and add it to the sauce mixture. Stir well with a spoon until combined and creamy.

Once the udon noodles are cooked, drain them thoroughly.

Add the drained udon noodles directly into the bowl with the prepared sauce.

Toss the noodles thoroughly with the sauce using tongs until they are evenly coated and every strand is covered in the creamy sauce.

Serve the creamy chilli oil udon immediately in individual bowls.

Garnish each serving with chopped spring onion, 1 teaspoon toasted sesame seeds, and carefully place 1 egg yolk on top of each bowl.

Before eating, mix everything together well to incorporate the egg yolk into the creamy sauce, then enjoy your high-protein, quick, and delicious meal!
