Peel the 2 large pieces of yuca and cut them into smaller, manageable pieces, about 2-3 inches long. Place the yuca pieces in a large pot and cover with water. Bring to a boil over high heat.

In a large, deep skillet or Dutch oven, heat 4 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C). If you don't have a thermometer, a small piece of yuca should sizzle immediately when dropped in.

Carefully place a few yuca balls into the hot oil, ensuring not to overcrowd the pan. Fry the yuca balls, turning occasionally, until they are golden brown and crispy on all sides, about 4-6 minutes per batch. Remove with a slotted spoon and place on a plate lined with paper towels to drain excess oil.

While the yuca is cooking, prepare the chicken for the sauce. If not already cooked, boil or pan-fry the chicken breast until cooked through, then shred or dice it.

In a separate medium-sized pan, add 1 tablespoon of olive oil over medium heat. Add the chopped red onion, red bell pepper, and green bell pepper to the pan. Sauté until the vegetables are softened, about 5-7 minutes.
