In a large mixing bowl, add the 500 grams of ground chicken. Add the grated onion (ensuring excess liquid is squeezed out), minced garlic, grated ginger, ground cumin, ground coriander, smoked paprika, turmeric powder, chili powder, black pepper, and salt.

Stir in the finely chopped fresh parsley and cilantro. If using, add the 2 tablespoons of breadcrumbs.

Using your hands, mix all the ingredients thoroughly until well combined. Ensure the spices and herbs are evenly distributed throughout the chicken mixture.

Take a portion of the chicken mixture (approximately 60-70 grams per kebab) and shape it into an oblong kebab shape, about 10-12 cm long and 2-3 cm thick. Alternatively, you can shape them around wooden skewers (if using, soak skewers in water for 30 minutes prior to prevent burning).

Place the formed chicken kebabs on the prepared baking tray, ensuring they are spaced evenly.

Brush the tops of the kebabs lightly with olive oil. Bake for 20-25 minutes, or until the kebabs are golden brown, cooked through, and slightly caramelized around the edges. The internal temperature should reach 74°C (165°F). Flip them halfway through baking for even browning.

Remove from the oven and let rest for a few minutes before serving.
