Chop the onion and red bell pepper into small pieces. (Optional: Pour a glass of wine for yourself.)

Place a large pan on the stove over medium heat. Add olive oil to the pan, then add the chopped onion and red bell pepper. Sauté for about 5 minutes until softened.

While the vegetables are cooking, fill a separate pot with water for the tortellini. Place the pot on the stove over high heat to boil. Add salt to the boiling water.

Once the onions and bell peppers have cooked for about 5 minutes, add the minced garlic to the pan and stir well. Add a generous amount of spinach and stir until it wilts down.

Open and add both packets of Trader Joe's Tikka Masala Sauce to the pan. Stir to combine with the vegetables and spinach. Pour in some Half & Half to the sauce mixture and stir.

Once the water is boiling, add the entire package of Trader Joe's Spinach Tortellini to the pot. Cook for 2 to 3 minutes, or according to package directions. Turn off the heat for the tortellini.

Drain the cooked tortellini, reserving some of the pasta water. Add the drained tortellini directly into the pan with the tikka masala sauce and vegetables. Stir everything together thoroughly. Add some of the reserved pasta water to the mixture to loosen the sauce to your desired consistency.

Serve the Spinach Tortellini Tikka Masala into bowls. (Optional: Sprinkle red chili flakes on top for an extra kick of spice.) Enjoy your 15-minute dinner!
