Chop the large potatoes into chips. Place them in an air fryer basket and drizzle generously with olive oil. Season with salt, pepper, 1 tablespoon of garlic granules, and 1 tablespoon of chicken seasoning. Shake the basket well to ensure all chips are evenly coated.

Cook the seasoned chips in the air fryer at 185°C (365°F) for 30 minutes, or until they are cooked through and golden brown, shaking the basket occasionally for even cooking.

While the chips are cooking, add the 5 hot and spicy mini fillets to a separate air fryer (or cook after the chips if only one air fryer is available). Cook them at 185°C (365°F) for 17 minutes, or until fully cooked and crispy.

Prepare the hot honey sauce by combining 4 tablespoons of honey, 1 tablespoon of Sriracha, and 1 teaspoon of chilli flakes in a small bowl. Stir until well mixed.

Prepare the garlic hot honey mayo. In another small bowl, combine 3 tablespoons of garlic mayo with 1 teaspoon of parsley and 1 teaspoon of garlic granules. Add 1 teaspoon of the prepared hot honey sauce to this mixture and stir until fully incorporated.

Once the chicken fillets are cooked, transfer them to a bowl. Pour most of the hot honey sauce over the chicken, reserving a small amount for drizzling later. Toss the chicken to coat evenly, then chop the coated chicken into bite-sized chunks.

To assemble, arrange the cooked chips on your serving plate(s). Top generously with the hot honey chicken chunks.

Drizzle the remaining hot honey sauce over the chicken and chips. Garnish with sliced red chilli, sliced spring onion, and fresh chopped parsley.

Serve immediately with the garlic hot honey mayo on the side for dipping.
