Massage the kale: In a large bowl, combine the chopped kale with 1 teaspoon olive oil, 1 teaspoon lemon juice, and 1/8 teaspoon salt. Use your hands to massage the kale for 2-3 minutes until it softens and becomes bright green.
Prepare the creamy tahini dressing: In a small bowl, whisk together the tahini, 2 tablespoons lemon juice, 2 tablespoons water, minced garlic, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Add more water, 1 teaspoon at a time, until the dressing reaches your desired consistency.

Assemble the power bowls: Divide the cooked quinoa among 4 bowls. Top each with massaged kale, steamed broccoli, diced cucumber, and roasted chickpeas. Drizzle generously with the creamy tahini dressing.
