Prepare the sweet potato waffle buns: Place the chopped sweet potatoes in a medium saucepan and cover with water. Bring to a boil over medium-high heat and cook for 15-20 minutes, or until very tender. Drain thoroughly.

Transfer the cooked sweet potatoes to a large bowl and mash thoroughly with a fork or potato masher until smooth. Add the egg, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Mix well to combine.

During the last minute of cooking, place a slice of cheese on top of each burger patty. Cover the skillet with a lid or foil to help the cheese melt.

Assemble the burgers: Place one sweet potato waffle bun on a serving plate. Top with a cheeseburger patty, followed by a slice of red onion, a slice of tomato, and a lettuce leaf. Finish with another sweet potato waffle bun.
