Add the dry pasta to a large, deep pan or pot. Pour in approximately 2 cups of water, or just enough to barely cover the pasta.

Place the pan over medium-high heat. Add 1 teaspoon of salt to the water and stir gently. Bring the water to a simmer and cook, stirring occasionally, until all the water has evaporated and the pasta is perfectly al dente.

While the pasta is cooking, shred the cheddar cheese and gouda cheese if not already shredded.

Once the pasta is cooked and the water has been absorbed, reduce the heat to low. Add the 4 ounces of shredded cheddar cheese and 4 ounces of shredded gouda cheese to the pan with the pasta.

Pour in the 8 fluid ounces of evaporated milk and add 1 tablespoon of gochujang. Stir all ingredients thoroughly until the cheeses have melted completely and a smooth, creamy sauce has formed.

Stir in 1/2 teaspoon of black pepper. Taste and adjust seasoning if needed. If you desire a thicker or cheesier consistency, you can add a little more shredded cheese at this stage and stir until melted.

Serve the One Pot Spicy Gochujang Mac n Cheese immediately, garnished with chopped green onions.
