Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish with butter or non-stick spray.

In a medium bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, and salt. Set aside.

In a large bowl, cream together the softened unsalted butter and granulated sugar with an electric mixer until light and fluffy, about 2-3 minutes.

Beat in the large egg and vanilla extract until well combined.

Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.

Gently fold in the diced Granny Smith apples.

Pour the pudding batter into the prepared baking dish and spread evenly.

Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean. The pudding should be golden brown and springy to the touch.

While the pudding bakes, prepare the sticky toffee sauce. In a small saucepan over medium heat, melt the unsalted butter. Add the light brown sugar and heavy cream. Bring to a gentle simmer, stirring constantly, until the sugar is dissolved and the sauce is smooth.

Remove the sauce from the heat and stir in the vanilla extract and salt.

Once the pudding is out of the oven, immediately pour about half of the warm sticky toffee sauce evenly over the top. The sauce will soak into the warm pudding.

Serve the sticky apple pudding warm, with extra sticky toffee sauce on the side.
