Chop 1 1/2 onions into small pieces. Mince 12 garlic cloves. Dice 1 whole zucchini. Chop 8-10 spring onions.

Spray avocado oil into a large pan or wok over medium heat. Add the chopped onions and sauté for 3-5 minutes until softened. Add the minced garlic and sauté for another 1-2 minutes until fragrant.

Add the diced zucchini to the pan and sauté for 3-4 minutes until slightly tender. Stir in the chopped spring onions and cook for 2-3 minutes until softened.

Push the vegetables to one side of the pan. Add the 800 grams of lean ground beef to the empty side of the pan. Break up the beef with a spoon and cook until browned, about 5-7 minutes. Season the beef with salt and black pepper to taste.

Stir the cooked beef and vegetables together. Add 100 grams of black bean paste to the pan and stir thoroughly to combine with the beef and vegetables. Cook for 2-3 minutes, stirring constantly.

Add sweetener to taste, starting with a small amount and adding more if desired. Stir well to incorporate. Pour in the 45 grams corn starch slurry (corn starch mixed with water) and stir continuously until the sauce thickens to your desired consistency.

Cook the udon noodles according to package directions. Drain well. Portion 250 grams of cooked udon noodles into each of your four meal prep containers.

Spoon a generous amount of the prepared jjajjang sauce over the udon noodles in each container. Garnish each portion with sliced cucumbers just before serving or packing for meal prep.
