In a saucier or large pot, melt 1 tablespoon of unsalted butter over medium-high heat.

Add the sliced onion to the pot and sweat until fragrant and softened, about 5-7 minutes.

Add the minced garlic to the pot and cook for 1-2 minutes until fragrant, being careful not to burn it.

Add the remaining 1 stick and 7 tablespoons of unsalted butter to the pot and cook until completely melted.

Stir in the Old Bay seasoning, shrimp bouillon, smoked paprika, garlic powder, onion powder, cayenne pepper, chili powder, and white pepper. Mix well until all seasonings are thoroughly incorporated into the butter, onion, and garlic mixture.

Add the all-purpose flour to the mixture and stir continuously for 1-2 minutes to create a roux-like base. Ensure there are no dry spots of flour.

Gradually pour in the water while continuously stirring to prevent lumps. Continue to stir until the sauce thickens to your desired consistency, about 3-5 minutes.

Remove the sauce from the heat. Squeeze the juice from the lemon directly into the sauce and stir to combine.

Pour the prepared seafood boil sauce over your desired cooked seafood and vegetables.
