Prepare the mortadella skewers: Take individual slices of mortadella and thread them onto wooden skewers, folding and bunching them to create substantial skewers of meat. Aim for about 2 skewers per serving.

Toast the bread: Place the halved ciabatta bread, cut side down, into the same pan, directly into the remaining butter, herbs, and garlic. Press the bread down to absorb the flavors and toast until golden and crispy, about 3-5 minutes. Flip the bread to check for desired crispness. Remove both halves from the pan.

Assemble the first half: Place one half of the toasted bread on a cutting board. Spread a generous amount of ricotta cheese evenly over the toasted surface. Drizzle hot honey liberally over the ricotta.

Add mortadella: Arrange the fried mortadella skewers on top of the hot honey and ricotta. Drizzle more hot honey over the mortadella.

Assemble the second half: Take the other half of the toasted bread. Spread a layer of pesto evenly over its toasted surface.

Combine and cut: Place the pesto-covered bread half on top of the mortadella and ricotta half to complete the sandwich. Gently press down on the sandwich. Using a large, sharp knife, carefully cut the sandwich in half through the middle.
