Preheat your oven to 375°F (190°C).

Pour the 2 cups of long grain white rice evenly into the bottom of a rectangular baking dish.

Pour the contents of both 14.5 ounce cans of petite cut diced tomatoes, including all their juice, over the rice in the dish.

Sprinkle 1 tablespoon of chicken bouillon seasoning over the tomatoes and rice.

Open the packet of Good Seasons Zesty Italian Dressing & Recipe Mix and sprinkle approximately half of its contents evenly over the ingredients in the dish.

Pour chicken stock into one of the empty 14.5 ounce diced tomato cans to measure 14.5 fluid ounces of chicken stock, then pour this into the baking dish.

Pour the 1 stick (1/2 cup) of melted butter into the dish, distributing it over the liquid mixture.

Sprinkle approximately 1/2 cup of grated Pecorino or Parmesan cheese over the liquid mixture.

Arrange the 4 boneless, skinless chicken thighs directly on top of the ingredients in the dish.

Season the chicken thighs with salt and black pepper, to taste.

Sprinkle the remaining half of the Good Seasons Zesty Italian Dressing & Recipe Mix packet over the chicken thighs.

Sprinkle paprika over the chicken thighs for color and flavor.

Cover the baking dish tightly with aluminum foil. Place the covered dish into the preheated oven and bake for 60 minutes. Do not remove the foil during baking.

Once baked, carefully remove the dish from the oven and remove the foil. The chicken should be cooked through and the rice tender. Fluff the rice gently with a fork before serving with the chicken.
