Heat a large skillet over medium heat. Add the avocado oil.

Add the 2 pounds of ground beef to the skillet and cook until browned, breaking it up with a spoon as you go. Once cooked through, drain all but about 2 tablespoons of the fat from the skillet. You can use tongs and a paper towel to absorb excess fat.

Add the small diced onion, celery, bell pepper, and carrots to the skillet with the ground beef. Season with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Continue cooking, stirring occasionally, until the ground beef begins to stick to the pan a bit and the vegetables have softened, about 5-7 minutes.

While the meat and vegetables cook, whisk together all the sauce ingredients in a medium bowl: ketchup, yellow mustard, Worcestershire sauce, apple cider vinegar, coconut sugar, and 1 teaspoon of salt.

Add the prepared sauce and beef stock to the skillet. Use a wooden spoon to deglaze the pan, scraping up any brown bits from the bottom. Stir in the tomato paste.

Bring the mixture to a simmer and allow it to thicken, stirring occasionally, for 15-20 minutes.

Stir in the roughly chopped dill pickles. Remove from heat.

Serve the sloppy joe mixture warm with iceberg lettuce cups, pickled red onions, extra dill pickles, and chips.
