Preheat your oven to 175°F. In an oven-safe pot, combine the 2 cups of sliced red chili pepper, 1 cup of whole red Thai pepper, and 1 cup of peeled garlic cloves.

Pour 3 cups of olive oil into the pot, ensuring all the peppers and garlic are fully submerged and covered by the oil.

Transfer the pot to the preheated oven and slow roast for 40 minutes. The low temperature will gently infuse the oil and soften the ingredients without browning them.

Once roasted, carefully remove the pot from the oven and allow the mixture to cool down completely to room temperature. This will take approximately 30 minutes.

Once cooled, pour the entire roasted pepper and garlic mixture, including all the infused olive oil, into a blender cup.

Add 1 tablespoon of salt, 1 teaspoon of granulated sugar, 2 tablespoons of vinegar, 2 tablespoons of starch, 1 tablespoon of smoked paprika, and 1/4 teaspoon of cumin to the blender cup.

Add 3 ice cubes to the blender. Squeeze the juice of half a lemon directly into the blender cup.

Secure the lid on the blender and blend on high speed until the mixture is completely smooth and well combined. This should take about 8-10 seconds.

Pour the finished Spicy Garlic Sauce into a squeeze bottle for easy serving. It's now ready to be enjoyed over your favorite foods, such as fries or grilled meats.
