Heat the white wine in a small saucepan over medium heat for about 2-3 minutes to cook off the alcohol. Remove from heat and let it cool completely.

Sprinkle the baby cucumbers with salt. Rub them gently on a cutting board to help release some moisture. Trim the stems from the cucumbers. Cut the cucumbers into bite-sized pieces. Slice the chilli pepper into thin rounds.

Place the prepared cucumbers, sliced chilli pepper, and all the seasoning ingredients (soy sauce, the cooled white wine, sugar, and sesame oil) into a ziplock bag.

Massage the ziplock bag well for 1-2 minutes to ensure all ingredients are thoroughly combined and the cucumbers are evenly coated with the seasoning.

Place the ziplock bag in the refrigerator and allow the cucumbers to marinate for at least 30 minutes.

Once marinated, remove from the refrigerator and serve immediately.
