Place the 3 large eggs in a small saucepan and cover with cold water by about 1 inch. Bring the water to a rolling boil over high heat, then immediately remove from heat, cover, and let stand for 8-10 minutes for hard-boiled eggs.

Squeeze the juice from the 1/2 lemon directly over the ingredients in the bowl. Add the 1/4 teaspoon of salt, 1/4 teaspoon of black pepper, 1/2 teaspoon of chaat masala, and 1/2 teaspoon of red chili powder.

Using a spoon, gently mix all the ingredients together until they are well combined and the eggs and vegetables are evenly coated with the spices and lemon juice. Be careful not to mash the eggs too much.
