Preheat your oven to 180°C (350°F). Line a baking tray with baking paper.

Peel, core, and dice the 2 apples into small, uniform pieces.

In a medium bowl, combine the diced apples, 1 teaspoon of cinnamon, 1/4 cup of brown sugar, 1/4 cup of caster sugar, and 1 tablespoon of lemon juice. Mix thoroughly until all the apples are evenly coated.

Lay out the 2 sheets of puff pastry. Cut each sheet into 3 equal rectangles, yielding a total of 6 pastry rectangles.

Take one pastry rectangle and place a generous portion of the apple mixture onto one half of it, leaving a border around the edges. Fold the other half of the pastry over the apple mixture to create a pocket. Use a fork to firmly crimp the edges of the pastry, sealing the pie completely. Repeat this process for all remaining pastry rectangles and apple filling.

In a small bowl, whisk the 1 egg until well combined. Brush the tops of each assembled apple pie with the whisked egg wash. This will give them a golden, glossy finish.

Carefully place the prepared apple pies onto the lined baking tray. Bake in the preheated oven for 20-25 minutes, or until the pastry is puffed, golden brown, and the filling is bubbling.

Once baked, remove the apple pies from the oven and allow them to cool slightly on the baking tray before serving. They are delicious warm.
