Place the dried jujubes and goji berries in a large bowl. Cover with cool water and gently swish to wash away any dust or debris. Drain thoroughly.

Using a spoon, carefully scrape the skin from the fresh ginger. Slice the peeled ginger into thin rounds or matchsticks.

Core the red apple and slice it into small, thin wedges. There's no need to peel the apple as the skin adds flavor and nutrients.

Transfer the washed jujubes, goji berries, sliced ginger, and sliced apple into a large stockpot or Dutch oven.

Pour 8 cups of water into the pot, ensuring all ingredients are fully submerged. If needed, add a little more water to cover.

Bring the mixture to a rolling boil over medium-high heat. Once boiling, reduce the heat to low, cover the pot, and let it simmer gently for 45 minutes. The liquid should reduce slightly and deepen in color.

After simmering, you can serve the tea directly by ladling the liquid along with some of the cooked fruits and ginger into cups. For a richer tea, proceed to the next step.

Optional: Carefully strain the tea through a fine-mesh sieve into a heatproof bowl, reserving the liquid and solids separately. Place the cooked solids (jujubes, apple, goji berries, ginger) back into the sieve over another bowl.

Optional: Using the back of a spoon, mash the cooked solids through the sieve to extract any remaining liquid and pulp. Discard the fibrous remnants.

Optional: Combine the mashed pulp and extracted liquid back into the reserved tea. Stir well. This will result in a thicker, more concentrated tea.
