Rinse 2 cups of SunRice medium grain rice under cold water until the water runs clear.

Add the rinsed rice to a rice cooker with 2 cups of water. Cook according to your rice cooker's instructions.

Once cooked, immediately spread the hot rice evenly onto a large tray or baking sheet. This allows it to cool down completely and prevents it from clumping, which is crucial for good fried rice texture. Let it cool completely, ideally for at least 30 minutes, or refrigerate for faster cooling.

Heat a wok over high heat until it begins to smoke.

Add 1 tablespoon of cooking oil to the hot wok. Crack in the 2 large eggs and scramble them quickly until they are just set but still soft. Remove the scrambled eggs from the wok and set aside.

Add the remaining 1 tablespoon of cooking oil to the wok. Add the 1 tablespoon of minced garlic and stir-fry for a few seconds until fragrant.

Add the cooled rice to the wok. Using the back of a ladle or wok spatula, break up any clumps of rice, ensuring each grain is separate.

Continue to stir-fry the rice for several minutes, tossing constantly. The goal is to dry out the rice slightly and get a light toasted flavor, making it "dance" in the wok.

Return the scrambled eggs to the wok with the rice.

Season the fried rice with 2 tablespoons of light soy sauce, 1/2 teaspoon of salt, and 1/4 teaspoon of white pepper.

Stir-fry vigorously to ensure all ingredients are well combined and evenly coated with the seasonings.

Add the 2 tablespoons of chopped spring onion and give it a final quick toss.

Serve the fried rice immediately while hot.
