Combine the white sugar and sea salt in a bowl. Massage the mixture into every surface of the pork shoulder, working it into folds and crevices. Set the pork in a dish, cover loosely, and let it cure in the fridge for a full day (approximately 24 hours).

Take the pork straight from the fridge (do not rinse) and place it in your roasting pan.

Roast the pork in a preheated oven at 150°C for approximately 5 hours, basting with the collected juices each hour, until a fork twists through the meat with no resistance.

Remove the pork from the oven and let it sit for 10-15 minutes under a loose sheet of foil.

While the pork rests, increase the oven temperature to 220°C.

Combine the crust sea salt and brown sugar in a small bowl. Baste the pork with any remaining pan juices, then press the brown sugar mixture over the top and sides of the pork only.

Slide the pork back into the hot oven for about 10 minutes or until the sugar is caramelized and forms a crust.

Rest the pork briefly, then use two forks to pull the meat apart into chunks.

Stir together the gochujang, soy sauce, rice wine vinegar, sesame oil, honey, and a splash of water (to loosen) in a small bowl to create the easy sauce.

Bring the pulled pork to the table with steamed white rice, butter or baby gem lettuce cups, kimchi, sliced cucumber, chopped spring onion, and the easy sauce alongside for assembly.
