In a large mixing bowl, combine the peeled and cubed sweet potatoes with olive oil, kosher salt, and freshly ground black pepper. Toss well to ensure all the potato cubes are evenly coated.

Spread the seasoned sweet potato cubes in a single layer on the prepared baking sheet. Avoid overcrowding the pan, as this will steam the potatoes instead of roasting them.

Roast the sweet potatoes in the preheated oven for 15 minutes. Halfway through, stir the potatoes to ensure even cooking and browning.

While the sweet potatoes are roasting, prepare the honey glaze. In a small bowl, whisk together the honey, melted unsalted butter, ground cinnamon, and ground nutmeg until well combined.

Carefully remove the baking sheet from the oven. Pour the prepared honey glaze over the partially roasted sweet potatoes and gently toss them directly on the baking sheet to coat every cube.

Return the glazed sweet potatoes to the oven and continue to roast for another 10 to 15 minutes, or until the potatoes are tender, caramelized, and slightly sticky. Stir once more during this final roasting period.
