Preheat your oven to 375°F. Grease a 9x9-inch baking dish or an 8x11-inch baking dish with the softened butter.

In a large bowl, combine the thinly sliced potatoes, heavy cream, minced garlic, chopped fresh thyme, grated nutmeg, kosher salt, and freshly ground black pepper. Toss gently to ensure all potato slices are coated.

Arrange about one-third of the potato mixture in an even layer in the prepared baking dish. Sprinkle with one-third of the shredded Trader Joe's Unexpected Cheddar Cheese.

Repeat layering with another one-third of the potato mixture and another one-third of the cheese. Finish with the remaining potato mixture on top.

Cover the baking dish tightly with aluminum foil and bake for 30 minutes.

Remove the foil, sprinkle the remaining Trader Joe's Unexpected Cheddar Cheese over the top, and continue baking uncovered for another 15-20 minutes, or until the potatoes are tender and the cheese is bubbly and golden brown. A knife inserted into the center should meet no resistance.

Let the gratin rest for 5-10 minutes before serving to allow it to set slightly. This makes for cleaner slices.
