Prepare the base vegetables: Dice the onion, mince the garlic, and dice the optional chilies.

Sauté vegetables: Heat the olive oil in a medium skillet or pan over medium heat. Add the diced onion, minced garlic, and diced chilies (if using) to the pan. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are softened and wilted.

Add dry ingredients and pastes: Stir in the salt, black pepper, coriander powder, chili powder, tomato paste, and unsweetened peanut butter into the sautéed vegetables.

Form the sauce: Continue to mix all the ingredients thoroughly for 2-3 minutes, ensuring the peanut butter melts and combines well with the other ingredients to form a cohesive sauce.

Incorporate tuna and simmer: Add the drained tuna to the sauce. Pour in about 1/4 cup of water (or a splash, as needed, to achieve desired consistency). Stir everything together. Reduce the heat to low, cover the pan, and let the mixture simmer for 5-7 minutes, or until the oil separates and rises to the top.

Garnish and serve: Remove the Feseekh Tuna from the heat. Garnish generously with the diced tomatoes, diced onions, and chopped fresh cilantro. Squeeze fresh lemon juice over the top just before serving. Serve hot with a loaf of bread.
