Cook the sweet potato: Pierce the sweet potato several times with a fork. Microwave for 5-7 minutes, or until very tender. Alternatively, roast in a 400°F (200°C) oven for 45-60 minutes. Let cool slightly, then scoop out the flesh and mash until smooth. Measure 1 cup of mashed sweet potato.

In a large bowl, whisk together the mashed sweet potato, egg, milk, 2 tablespoons of maple syrup, vanilla extract, and melted coconut oil until well combined.

In a separate medium bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, cinnamon, nutmeg, and salt.
