Cook the ditalini pasta according to package directions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside to cool completely.

In a large skillet over medium heat, cook the bacon slices until crispy. Remove the bacon from the skillet and place on a paper towel-lined plate to drain excess fat. Once cooled, finely chop the crispy bacon into small pieces.

Drain the can of chickpeas thoroughly.

In a large mixing bowl, combine the finely chopped Romaine lettuce, chopped provolone cheese, chopped crispy bacon, drained chickpeas, cooled ditalini pasta, chopped salami, chopped pepperoncini, and chopped red onion.

Prepare the dressing: In a separate jar or small bowl, combine the 1/2 cup of olive oil, 1/4 cup of red wine vinegar, 1 tablespoon of Dijon mustard, 1 teaspoon of garlic powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Secure the lid on the jar (or whisk vigorously in a bowl) and shake/whisk until all ingredients are well combined and emulsified.

Pour the prepared dressing over all the chopped salad ingredients in the large bowl.

Thoroughly toss all the ingredients until everything is evenly coated with the dressing. Serve immediately or chill for a short period before serving for enhanced flavors.
