If time permits, brown the diced beef in a pan with 1 tablespoon of butter until seared on all sides. In the same pan, cook the bacon until crispy. This step adds depth of flavor but can be skipped for convenience.

Add all ingredients to the slow cooker: the browned beef (if applicable), cooked bacon (if applicable), whole button mushrooms, chopped carrots, shallots, tomato purée, bay leaves, crushed garlic cloves, fresh rosemary or thyme, salt, pepper, red wine, beef stock (use just enough to almost cover the ingredients), and cornflour.

Stir everything gently to combine. Cover the slow cooker and cook on low for 7-8 hours. The mushrooms will reduce greatly in size during cooking.

Once cooking is complete, check the beef for tenderness. It should be very soft and easily pulled apart.

Ladle the Slowcooker Beef Bourguignon into serving bowls. Garnish generously with fresh parsley.
