Preheat your oven to 400°F. Have a 9x13 inch baking dish ready.

In the 9x13 inch baking dish, pour in the full-fat coconut milk. Add the Thai red curry paste, minced garlic, ground ginger, brown sugar, soy sauce, fish sauce, and sesame oil.

Using a spatula or whisk, thoroughly mix all the sauce ingredients directly in the baking pan until well combined and the curry paste is fully incorporated.

Add the chopped bok choy to the mixed sauce in the baking dish. Toss the bok choy to coat it evenly with the sauce.

Arrange the frozen dumplings in a single layer over the bok choy and sauce in the baking dish. Ensure they are not overlapping too much to allow for even cooking.

Spoon some of the sauce from the bottom of the dish over the tops of the dumplings to coat them lightly.

Cover the baking pan tightly with aluminum foil. Bake in the preheated oven for 20 minutes.

Remove the foil and bake for an additional 5 minutes, or until the dumplings are cooked through and slightly browned on top.

Carefully remove the baking dish from the oven. Garnish generously with chopped green onions, sesame seeds, and a drizzle of chili oil, as desired.
