Preheat your oven to 360°F (180°C). Line a baking sheet with parchment paper.

Add the cottage cheese and eggs into a blender cup.

Blend the mixture until it is completely smooth and no lumps of cottage cheese remain. This should take about 30 seconds to 1 minute.

Pour the blended mixture onto the prepared parchment paper on the baking sheet. Use a spatula or the back of a spoon to spread it out evenly into a thin, rectangular layer, approximately 1/4-inch thick.

Generously sprinkle the everything but the bagel seasoning (or your preferred seasoning) over the entire surface of the spread mixture.

Bake in the preheated oven for 35 minutes, or until the flatbread is golden brown and set.
