In a container, add the chia seeds, 1/2 cup plain Greek yogurt, 1/2 cup unsweetened almond milk, vanilla protein powder, pinch of salt, and vanilla extract.

Zest 1/2 a lemon directly into the container. Squeeze the juice from the 1/2 lemon (about 2 tablespoons) into the container.

Whisk all these ingredients together until well combined. Cover the container and place it in the refrigerator for at least 4 hours, or preferably overnight, to allow it to thicken to a thick and creamy consistency.

When ready to assemble, if using frozen mixed berries, place 1 cup of berries in a small bowl and microwave for 45 seconds to soften them.

In a separate small bowl, combine 1/4 cup Greek yogurt with a little splash of almond milk and a tiny bit of maple syrup. Mix until smooth; this will be used for layering.

Spoon a layer of the thickened chia pudding base into a serving glass.

Add a layer of the softened mixed berries over the chia pudding.

Add a layer of the prepared extra Greek yogurt mixture.

Repeat the layers: add another layer of chia pudding, followed by berries, and then the Greek yogurt mixture.

Garnish the top with additional lemon zest and sprinkle toasted slivered almonds (or your preferred nut/seed) over the top. Serve and enjoy!
