Leave the jar in the fridge overnight (for at least 8 hours) to steep and create the hibiscus cold brew.

Cut a large piece of watermelon into chunks. Place the watermelon chunks into a blender and blend until smooth to create fresh watermelon juice.

Strain the watermelon juice through a fine-mesh sieve into a clean glass or pitcher to remove any pulp.

Peel a piece of fresh ginger. Grate the peeled ginger into a small bowl.

Fill a serving glass with ice.

Pour the prepared hibiscus cold brew into the glass, filling it about one-third of the way.

Add the fresh watermelon juice to the glass, filling it another one-third of the way.

Add the grated fresh ginger to the drink, according to your taste preference.

Stir the drink well with a spoon to combine all the ingredients.

Garnish the rim of the glass with a slice of watermelon before serving.
