Preheat your oven to 400°F. Line a large baking sheet with parchment paper for easy cleanup.

Spread the frozen french fries in a single layer on the prepared baking sheet. Drizzle evenly with olive oil, then sprinkle with kosher salt and black pepper. Bake for 20-25 minutes, flipping the fries halfway through, until they are golden brown and crispy.

While the fries are baking, prepare the garlic butter mixture. In a small saucepan, melt the unsalted butter over medium-low heat. Add the minced garlic and cook for 1-2 minutes until fragrant, being careful not to brown the garlic. Remove from heat.

Once the fries are done and crispy, transfer them to a large mixing bowl. Pour the melted garlic butter mixture over the fries. Add the freshly grated Parmesan cheese, chopped fresh parsley, and red pepper flakes (if using). Toss gently to ensure all the fries are evenly coated.

Return the coated fries to the baking sheet, spreading them out again. Evenly sprinkle the shredded mozzarella and sharp cheddar cheeses over the fries.

Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheeses are completely melted and bubbly. Watch carefully to prevent burning.

Remove from the oven and serve immediately. Garnish with extra fresh parsley if desired.
