Place the cubed chicken breast into a bowl.

Add 1 tablespoon of soy sauce, 1 tablespoon of rice wine vinegar, 1 egg, and 1 tablespoon of cornstarch to the chicken.

Mix all ingredients together until the chicken is well coated. Let the chicken marinate for 15 minutes.

In a separate bowl, combine 2 tablespoons of soy sauce, 2 tablespoons of rice wine vinegar, 2 tablespoons of honey, 1 tablespoon of sriracha, 1 teaspoon of sesame oil, and 1 teaspoon of grated ginger.

In a small separate dish, mix 1 tablespoon of cornstarch with 1 tablespoon of water to create a slurry. Add this slurry to the sauce mixture.

Whisk all sauce ingredients together until well combined. Set aside.

Place 100g of cornstarch into a shallow dish.

Take each piece of marinated chicken and dredge it thoroughly in the cornstarch, ensuring it's completely coated.

Heat oil in a pan or wok to a high temperature suitable for deep frying.

Carefully place the coated chicken pieces into the hot oil. Fry the chicken for 5 minutes, or until golden brown and crispy.

Remove the fried chicken from the oil and place it on a wire rack or paper towel-lined plate to drain excess oil.

Pour the prepared hot honey sauce into a clean pan. Heat the sauce over medium heat until it starts to thicken and bubble.

Add the fried chicken pieces to the pan with the sauce. Toss the chicken in the sauce until each piece is evenly coated.

Transfer the hot honey chicken to a serving dish. Garnish with sesame seeds and chopped spring onions, if desired. Serve immediately.
