In a large bowl, combine the flour, water, salt, and yeast for the sandwich bread.

Knead the mixture by hand on a clean surface until a smooth, elastic dough forms, about 8-10 minutes.

Heat a large pan or griddle over medium heat. Take one slice of the prepared sandwich bread and dip one side into the warm birria consommé.

Place the consommé-dipped side of the bread down onto the hot pan.

Generously layer shredded cheese over the bread in the pan, allowing it to start melting.

Place a generous amount of shredded birria meat over the melting cheese.

Sprinkle diced white onion and chopped cilantro over the birria meat.

Take another slice of bread and dip one side into the birria consommé.

Place the second dipped bread slice on top of the filling, with the consommé-dipped side facing down onto the filling.

Cook the sandwich in the pan, pressing down lightly with a spatula, until both sides are golden brown and crispy, and the cheese is fully melted. This will take about 3-5 minutes per side.

Repeat steps 7-14 for the remaining sandwiches.

Cut each cooked Birria Sandwich in half and serve immediately with a side of warm birria consommé for dipping.
