If starting with whole freeze-dried strawberries, blend 1 cup of freeze-dried strawberries in a food processor or blender until a fine powder is formed. Measure out 3 tablespoons of this powder for the glaze.

In a large measuring cup or bowl, combine the 2 cups of water, 3 tablespoons of freeze-dried strawberry powder, and 2 tablespoons of cornstarch. Whisk thoroughly until all ingredients are well combined and there are no lumps.

If desired, add 2 to 3 drops of red gel food coloring to the mixture. Whisk again until the color is evenly distributed.

Pour the entire mixture from the measuring cup into a skillet. Place the skillet over medium heat.

Add the 1/2 cup of granulated sugar to the skillet. Continuously stir the mixture with a whisk or spatula as it heats. Do not stop stirring, as the glaze will thicken quickly and can clump.

Continue stirring until the glaze begins to bubble and thickens to a consistency that coats the back of a spoon. The small strawberry pieces will remain, adding texture and flavor.

Once the desired consistency is reached, remove the skillet from the heat. Allow the glaze to cool completely for at least 1 hour before using it to decorate desserts. The glaze will continue to thicken as it cools.
