Preheat your air fryer to 390°F (199°C).

Prepare the zucchini: Wash and dry the zucchini. Slice it into 1/2-inch thick rounds. Using a small knife or a round cookie cutter, carefully remove the center of each zucchini round to create a ring shape.

In a medium bowl, combine the cornstarch, grated Parmesan cheese, chili flakes, garlic powder, salt, and black pepper. Add the zucchini rings to the bowl and toss thoroughly with your hands until all the rings are evenly coated with the dry mixture.

Arrange the coated zucchini rings in a single layer in the air fryer basket. Do not overcrowd; cook in batches if necessary.

Air fry for 12-15 minutes, or until golden brown and crunchy. Flip the zucchini rings halfway through the cooking time (around 6-7 minutes) to ensure even crisping.

While the zucchini is air frying, prepare the dip. In a small pan, heat 1 tablespoon of olive oil over medium heat. Add the garlic cloves and chopped onion and sauté for 3-5 minutes until softened and lightly golden. Remove from heat.

Transfer the roasted garlic and onion to a food processor or blender. Add the plain Greek yogurt, tahini, lemon juice, fresh dill, salt, and black pepper. Blend until smooth and creamy. Taste and adjust seasoning as needed.

Serve the crispy air-fried zucchini rings warm with the prepared creamy tahini-dill dip.
