Heat olive oil in a large Dutch oven or soup pot over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat.

Add diced yellow onion to the pot and cook until softened, about 5 minutes.

Stir in minced garlic, dried oregano, dried basil, and red pepper flakes. Cook for 1 minute until fragrant.

Add tomato paste and cook for 2-3 minutes, stirring constantly, until it darkens slightly and coats the meat and vegetables.

Pour in the diced tomatoes (undrained), beef broth, and water. Bring the mixture to a boil, then reduce heat to a simmer.

Add the broken lasagna noodles to the simmering soup. Stir well to prevent sticking. Cook for 10-12 minutes, or until the noodles are al dente, stirring occasionally.

Season the soup with salt and black pepper to taste. Adjust seasonings as needed.
