Preheat your oven to 190°C (375°F).

Heat the olive oil in a 10-inch oven-safe, non-stick skillet over medium heat. Add the sliced courgettes and cook for 5-7 minutes, stirring occasionally, until softened and lightly browned. Add the halved cherry tomatoes and cook for another 2-3 minutes until they begin to soften.
While the vegetables are cooking, whisk the eggs in a large bowl. Add the ricotta cheese, grated Parmesan, chopped fresh basil, salt, and black pepper. Whisk until well combined.

Pour the egg mixture over the cooked courgettes and tomatoes in the skillet. Gently spread the vegetables evenly. Cook on the stovetop for 3-5 minutes, or until the edges of the frittata begin to set.

Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set in the center and lightly golden brown on top. A knife inserted into the center should come out clean.

Remove the frittata from the oven and let it rest in the skillet for 5 minutes before sliding it onto a cutting board. Garnish with extra fresh basil, slice into wedges, and serve warm or at room temperature.
