To make the bacon jam: In a large skillet, render the chopped bacon over medium heat until crispy. This should take about 8-10 minutes. Carefully remove the crispy bacon from the pan with a slotted spoon, reserving the bacon fat in the skillet.

Add the diced white onion, minced garlic, and chopped thyme to the skillet with the reserved bacon fat. Sweat the vegetables over medium heat, stirring occasionally, for 3-4 minutes until softened and fragrant.

Stir in the brown sugar, maple syrup, and white vinegar. Bring the mixture to a simmer and cook for 4-5 minutes, stirring occasionally, until the liquid starts to thicken.

Remove the skillet from the heat. Stir in the reserved crispy bacon, salt, and cracked black pepper. Allow the bacon jam to cool down slightly for at least 15 minutes before serving. This can be made ahead of time and stored in the refrigerator.

While the bacon jam cools, prepare the burger patties. Divide the ground beef into 8 equal portions (about 3 ounces each). Form each portion into a thin patty, slightly wider than your hamburger bun, as they will shrink when cooked. Season both sides of each patty generously with salt and black pepper.

Heat a large cast-iron skillet or griddle over medium-high heat. Lightly butter the cut sides of the hamburger buns and toast them in the hot skillet for 1-2 minutes until golden brown. Set aside.

Increase the heat to high. Place two burger patties in the hot skillet, leaving space between them. Cook for 2-3 minutes per side for a smash burger, or until desired doneness. During the last minute of cooking, place a slice of cheddar cheese on top of each patty to melt.

Once the first two patties are cooked and cheesed, stack one cheesed patty on top of another. Remove from the skillet and repeat with the remaining patties and cheese.
