In a medium bowl, combine the plain Greek yogurt (or blended cottage cheese), vanilla protein powder (or powdered peanut butter), maple syrup (or honey or sweetener of choice), and vanilla extract. Mix thoroughly with a spoon or whisk until the mixture is smooth, thick, and creamy.

Prepare your serving container. This can be a single large dish, individual cups, or meal prep containers. Begin by spreading a layer of the prepared yogurt mixture at the bottom of your chosen container(s).

Place a layer of Nilla wafers (or your chosen vanilla cookies) on top of the yogurt mixture, covering it as much as possible.

Arrange a layer of sliced banana pieces over the Nilla wafers.

Repeat the layering process: another layer of the yogurt mixture, followed by Nilla wafers, and then sliced bananas. Continue layering until all ingredients are used, ending with a layer of the yogurt mixture if possible.

Cover the container(s) tightly with a lid or plastic wrap.

Refrigerate the banana pudding for a minimum of 2 hours to allow the flavors to meld and the Nilla wafers to soften. For best results and a more developed flavor and texture, refrigerate overnight.
